Mini iced buns

I saw Rachel Allen make these cute little buns on the t.v and thought I'd love to give them a go as they looked delicious (they are). they're quick & easy to whip up too, which is always a bonus! the decorations of little chocolate buttons is fun also & while mine are'nt as neat as Rachel's they still taste good, albeit a little bright ;-)

Bacon Stuffed French Toast




Yes French toast again! why? because I love it & don't think you can have it too many times or have too many versions ;-) I also thought my bacon stuffed french toast was perfect for the breakfast Recipe Remix event hosted by Robin and Danielle


there is no real recipe you just make a bacon sandwich, I prefer plastic white bread for this. you then dip your sandwich in a mix of egg, milk or cream with a dash of vanilla & fry on both sides untill golden. serve with maple syrup if you like. I think this is a fun & different take on the every day bacon & eggs and thats why I chose it. thanks Robin & Danielle for hosting this very fun event!

Cookies



ok so I decided to make some cookies I'd had bookmarked for ages. LOL I'm not much of a cookie maker, but apart from the odd size difference ;-) they couldn't have been too bad. this is all that was left when I went to take the photo. the recipe's from taste.com.au. am sending them to Ruth for her bookmarked recipe's event!


Ingredients

  • 125g butter, at room temperature
  • 200g (1 cup, firmly packed) soft brown sugar
  • 2 eggs
  • 300g (2 cups) plain flour
  • 1 tsp baking powder
  • 200g (1 cup) dark or milk Choc Bits

Method

  1. Preheat oven to 180°C.
  2. Beat butter and brown sugar using electric beaters until well combined. Add the eggs and beat well after each addition.
  3. Sift together plain flour and baking powder and mix into the butter mixture. Stir in Choc Bits.
  4. Roll large spoonfuls of mixture into balls and place about 15cm apart on oven trays lined with non-stick baking paper. Flatten the balls to about 7cm in diameter and 5-8 mm thick.
  5. Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through. Remove from oven and cool on trays. Store in an airtight container.

Penne Alla Vodka













This recipe comes from Nigella Lawson's book feast ( a fabulous book, btw) I've cooked it before and its quick & easy to prepare, always a bonus and tastes great, what more do you need. while flicking through feast the other night I noticed I'd made a note to try it with bacon added, so I did. the result? delicious & it will be made again. am sending this to Ruth for bookmark monday!

1 good sized onion
125 ml Vodka
2 tablespoons garlic-infused oil
4 tablespoons unsalted butter
salt
2 x 410g cans chopped tomatoes
2 tablespoons double cream
1kg penne rigate or other short , preferably ridged pasta
Parmesan for grating over at the table

Serves 10

If you are cooking this just before you eat, put the water for the penne on to boil before you start the sauce. You will need a big pan, enough to take the pasta and the sauce later.

Finely chop the onion, either by hand or in a processor. In a large pan, heat the garlic oil and add the finely chopped onion and a good sprinkling of salt. Cook the onion fairly gently for about 15 minutes without letting it catch and burn, which just means giving it a stir every now and again. It should be very soft and almost beginning to caramelize.

Tip in the cans of chopped tomatoes and continue cooking over a gentle heat, simmering for another 15-20 minutes. If you're cooking this ahead, and I always do, stop here.

Reheat the almost-finished tomatoes (or just continue as you were if you're making this in one unbroken fluid movement), stir in the double cream and take the pan off the heat. When the water for the pasta comes to the boil add a good measure of salt and tip in the penne. Set a timer for 3-4 minutes less than the packet instructions for cooking it, as you want to make sure it's cooked al dente and will need to start tasting early.

Drain the cooked pasta, tip it back in the pan and pour over the vodka, and add the butter and some more salt. Turn the penne in the vodka and melting butter and then tip it into the tomato sauce unless it is easier to pour the tomato sauce over the pasta: it depends on the sizes of the pans you are using.

Toss the pasta in the sauce until it is evenly coated and turn out into a large warmed bowl. Put it on the table along with a block of Parmesan and a grater.

EDIT: the above is the original recipe from feast. the changes I made were to add approx 2 rashers of bacon & to add the vodka in with the sauce not the pasta (I like it this way)

Its time for another menu plan monday, the weeks gone quick. I did ok the first time round only missing out on the soup, so thats on again this week. my mystery meals were a pasta dish & slow roast pork with potato gratin. please see more menu plans at organizing junkie
