Beef & Chilli Bean Wraps



While this dish may not photograph well or look pretty it did taste great and was a success with all the family, so will be made again. it being quick & easy only adds to its appeal.






Ingredients (serves 4

  • 1 large brown onion, chopped
  • 5oogr beef mince
  • 1 415gr can crushed tomatoes
  • 1 420gr mexican chilli beans, rinsed, drained
  • 1/2 cup medium salsa (or to your liking)
  • 2 tsp medium Mexican chilli powder blend
  • 1 tsp sugar
  • Salt & freshly ground black pepper
  • 8 pita's to serve
  • grated cheese to serve

Method

  1. Place onion in a medium saucepan fry over medium heat. Reduce heat to low and cook for 5 minutes or until the onion softens. Increase heat to high, add the mince and cook, breaking up the mince with a wooden spoon, for 10 minutes or until mince changes colour.
  2. Stir in the undrained tomatoes, chilli beans, salsa, chilli powder blend and sugar, and bring to the boil over medium-high heat. Reduce heat to low and cook, partially covered, for 25 minutes or until the mixture is thick. Taste and season with salt and pepper.
  3. To serve, spoon the mince mixture onto the pita's, top with cheese and roll up firmly.

Apple & Walnut Cake
























I bought some walnuts recently thinking I'd make some muffins but in the end really didn't fancy muffins, so the walnuts remained unused in the cupboard. that was untill I also ended up with some slightly soft apples that really needed using in the fruit bowl. I thought about a delicious apple & walnut cake from allrecipes.com that I'd been wanting to make & decided the time was now, am glad I did as its delicious & will be made again. .   • 225 g butter, softened
  • 400 g sugar
  • 3 eggs
  • 10 ml vanilla extract
  • 375 g all-purpose flour
  • 7 g baking powder
  • 2 g ground cinnamon
  • 3 g salt
  • 375 g chopped, peeled baking apples
  • 240 g chopped walnuts
  1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour, baking powder, cinnamon, salt and gradually add to creamed mixture. Stir in apples and nuts. (Batter will be very stiff.)
  2. Spoon into a greased and floured 10-in. tube pan bake at 325 degrees F for 1 hour and 25 minutes or until cake tests done. Cool 10 minutes in pan before removing to a wire rack to cool completely.
