Next Platinum Chef Challenge :)

I was completely surprised & thrilled when Kate from Paved With Good Intentions awarded me the winner of the last Platinum Chef Challenge! as the winner I get to host this PCC. am sorry its taken so long to get on to it, truthfully as its my first time winning & hosting an event I've been really nervous, but have finally got around to it. I've gone for ingredients that are hopefully available all over & I'm looking forward to the dishes eveyone makes with them.

my five challenge ingredients are as follows!

Onions- brown, red, spring onions, white, it's your choice

Apricots- fresh (if you can) but canned or dried are fine

Cream- thickened cream, sour cream, whatever you use or have available

Nuts- as I'm not sure whats exactly around at this time world wide I'm leaving the actual type of nuts open. walnuts, peanuts, cashews, hazelnuts, whatever

Butternut pumpkin- or a pumpkin/squash you have available in your area

To take part please make either one or two dishes that include the above ingredients. you can use all the 5 ingredients in one dish or make 2, example dinner & a dessert! if more than one dish is made at least 2 of the challenge ingredients must be used in each dish. you can repeat an ingredient in each dish.

Menu Plan Monday (running late)

I'm running late with my menu this week (sorry) for some great ideas, please visit Organizing Junkie. btw my mystery meals last week were chilli con carne and lamb chops!

Monday- meatloaf served with potato, peas & corn
Tuesday- beans on toast
Wednesday- corned beef
Thursday- pizza
Friday- beef stroganoff
Saturday- mystery meal ;-)
Sunday mystery meal ;-)

Moroccan Pasta

This recipe for pasta using minced lamb & Moroccan spices is different but delicious. I've had it marked to do for some time. its adapted from Family Circle Mince Recipe's. am sending it to Ruth for Bookmarked Recipe's

500gr minced lamb
1 small onion diced
1 orange or red capsicum diced
1/2 cup peas
1 can tomatoes or 1/2 jar pasta sauce
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1 teaspoon tumeric
1 tablespoon curry powder (or to taste)
500gr dried pasta

fry lamb mince & drain fat, set aside. fry onion and capsicum untill softened then return mince. add spices & fry approx 5 minutes. add peas & tomato's and simmer on low for 30-40 minutes, (adding a little water if needed) . cook pasta according to packet directions, mix with sauce & serve.

Chocolate Orange Cake

I hadn't made a chocolate cake for a while despite several requests to do so. I also had some oranges that needed using so decided to make a chocolate orange cake! the result was delicious!

Ingredients (serves 8)

Melted butter, to grease
270g (1 1/3 cups, firmly packed) brown sugar
1/2 cup milk
100 butter, cubed
50g (1/2 cup) cocoa powder
1/4 tsp bicarbonate of soda
2 cups self-raising flour

2 tbs plain flour
2 eggs, lightly whisked
1/2 cup choc chips
juice & rind of 2 orange


  1. Preheat oven to 160°C. Brush a deep, round, 20cm (base measurement) cake pan with melted butter to lightly grease. Line the base and sides of the pan with non-stick baking paper.
  2. Place the sugar, milk and butter in a large saucepan. Use a fine sieve to sift the cocoa and bicarbonate of soda over the mixture. Place the pan over medium-low heat and use a whisk to stir until the mixture is smooth (don't boil the mixture). Remove the pan from the heat and set aside for 5 minutes to cool slightly, add in rind & juice.
  3. Use a sieve to sift half of each the self-raising and plain flours into the pan. Use the whisk to stir until the mixture is smooth. Repeat with the remaining flours. Add the eggs and continue to stir until well combined.
  4. Pour the mixture into the prepared cake pan and gently tap the pan on a bench to release any large air bubbles. Bake in preheated oven for 45-55 minutes or until a skewer inserted in the centre of the cake comes out clean. Set aside for 2 minutes before turning onto a wire rack. Set aside for 1 3/4 hours or until completely cool.
  5. ice with chocolate icing & top with grated chocolate if liked

Platinum Chef Challenge

I've always wanted to take part in the Platinum Chef Challenge but always left it too late, this time however I made it!!....just!! When I saw the 5 ingredients given by host & last Platinum Chef Challenge winner, That Girl I knew I'd need to make two dishes!

Salmon Patties with Sweet Chilli Mayo

no real recipe, just mix together mash potato & carrot (I like a chunky mash for this) with some onion, parsley, coriander, finely chopped chilli, sqeeze of lime juice and form into patties. coat in egg & bread crumbs & fry untill lightly golden!

to make sweet chilli mayo simply mix sweetchilli sauce & mayo together untill combined!

Pear Dessert Cake

mix 225gr self raising flour, 1 tea spoon mixed spice, 125gr soft butter, 150gr brown sugar (soft) 2 eggs and approx 3 table spoons milk. add in 2 pears ( I lightly stew mine) stir to combine then spoon into a greased loaf pan. bake in a pre-heated 180c oven for approx 1hr to 1hr 10 minutes. (or untill done) cake is meant to be slightly moist, serve with cream or custard if liked.
