Peanut Butter & Choc Chip Mini Muffins

Though not really a chocolate fan I love peanut butter and putting it in choc chip muffins makes them....well less chocolatey at least to me any way. the following recipe is adapted from my usual choc chip muffin recipe. it makes either 12 large or 24 mini muffins, your choice :)

2 and a half cups self raising flour (375 gr)
90gr butter chopped
1 cup (220 gr) caster sugar (normal sugar is ok)
1 1/4 cups (310gr) butter milk
1 egg beaten lightly
1 cup (90gr choc chips

pre heat oven to moderately hot and grease a 12 hole muffin pan. place flour in bowl & rub in butter. stir in sugar, buttermilk, egg and choc chips untill just combined, don't over mix. divide between prepared pan and bake approx 20 mins

note to turn above choc chip muffins into peanut butter & choc chip muffins reduced butter milk to 1 cup & add 1/4 cup peanut butter or to taste. add softened PB with other ingredients after rubbing in butter.

Apricot Upside Down Cake :)

This cake is a favourite with my family. quick and easy to make and its simple to change the topping to a fruit other than apricots, apple with cinnamon is delicious for example.

prepare round cake tin by lining base then sprinkling with sugar (raw brown or demerara is nice) place apricots cut side down to cover tin.
prepare butter cake mix to packet instructions or make your own as I did. 4 oz butter
3/4 cup caster sugar
1 teaspoon vanilla
2 eggs
2 cups self raising flour
small pinch salt
approx 1/2 cup milk
cream, butter, sugar, vanilla together untill light and fluffy. add eggs one at a time beating well.fold in dry ingredients (sifted) alternately with the milk. spoon mixture over prepared pan and bake in a moderate oven 35-40 minutes or untill done

Lasagne :)

After a long absence what better way to return than with a yummy classic like lasagne....sure it doesn't always photograph so well BUT it sure does taste good and I'll take that....after all you can't eat a photo :)

heres a link to the recipe I used . lasagne....note....I used fresh pasta sheets and omitted the bechamel using just mozzarella between the layers & on top
